Ingredients
Cupcakes
- 1 package Magnolias Carrot Cake Dip Mix
- 8 oz. can crushed pineapple
- 1 package yellow cake mix (15.25 oz.)
- 2 eggs
- 1 cup water
- 1/3 cup oil
- 1 cup sour cream
Simple Cream Cheese Frosting
- 8 oz. cream cheese, softened
- 2 cups powdered sugar
- 1 teaspoon vanilla extract
- 2 to 3 tablespoons milk or heavy cream (to reach desired consistency)
Directions
- In a small bowl mix together the Carrot Cake Dip Mix and crushed pineapple until fully combined. Cover and refrigerate for a minimum of 4 hours or overnight. The longer it sits the more incredible the flavor becomes!
- When ready to bake, preheat your oven to 350 degrees F.
- In a large bowl combine yellow cake mix, eggs, water, oil and sour cream. Beat with an electric mixer for 1 minute until smooth.
- Add the chilled Carrot Cake and pineapple mixture to the batter and stir until fully blended.
- Place muffin liners into a standard size muffin tin. Pour batter into liners, filling each only 3/4 full to allow room to rise.
- Bake for 19 to 23 minutes until done. Cupcakes are ready when the top springs back to the touch or when a toothpick inserted in the center comes out clean.
- Remove from oven and allow cupcakes to cool completely on a wire rack before frosting.
- While cupcakes cool, make your cream cheese frosting. Beat softened cream cheese until smooth and fluffy. Add powdered sugar one cup at a time, mixing well after each addition. Add vanilla extract and milk or heavy cream one tablespoon at a time until you reach a smooth, spreadable consistency.
- Frost cooled cupcakes generously and refrigerate until ready to serve. 🧁✨
Tips For The Perfect Carrot Cupcakes
Don't skip the overnight soak. Mixing the Carrot Cake Dip Mix with the crushed pineapple and refrigerating it overnight is the step that takes these cupcakes from good to absolutely extraordinary. The flavors meld together beautifully and the pineapple juice works its magic into the mix for a depth of flavor that tastes completely homemade.
Sour cream is the moisture secret. Don't be tempted to skip or substitute the sour cream. It is the ingredient that makes these cupcakes unusually moist and tender compared to a standard box mix cupcake. Full fat sour cream gives the best result every time.
Only fill liners 3/4 full. This batter rises beautifully in the oven so resist the urge to overfill. A 3/4 full liner gives you a perfectly domed cupcake top that is ideal for frosting. Overfilled liners lead to overflow and flat tops.
Cool completely before frosting. Cream cheese frosting melts on a warm cupcake, so patience is key here. Let them cool fully on a wire rack before you frost — about 30 to 45 minutes. It is worth the wait!
Make the frosting your own. For a thicker, pipeable frosting add less milk. For a softer spreadable frosting add a little more. You can also add a pinch of cinnamon to the frosting to echo the warm spices in the cupcake for an extra special touch. 🥕
